Dear Rahouti,
MGET does not calculate the anomaly of SST directly. For most of the SST datasets that MGET directly supports, it can calculate climatologies, e.g. mean SST over some period of time. You could then use that to calculate anomalies for a given date by subtracting the mean image from the image for that date.
